How to make green beans rice

Quick guide

·   Today we will prepare healthy, easy, and tasty green beans with rice in less than an hour. This dish is bursting with flavor and will keep you full and satisfied for lunch or dinner.

·   We are using young green beans freshly picked from the farmers market, though you can use any type of green beans or even frozen, and it will work just fine. Basmati rice gives a great flavor as a side dish. You can substitute it with any other type of rice, or simply remove it altogether if you enjoy the green beans alone.

·   The sauce is dense and includes garlic, green chili pepper, tomatoes, and tomato paste.

·   To enhance the taste, we add some spices such as salt, bay leaves, red paper powder, cumin, and black pepper. This part is optional and you can add or remove spices according to your preference.

·   For sautéing we are using olive oil, also any other type of light oil will work.

Preparation:

·   We start with the basics of preparing the sauce. You need to peel and chop a whole glove of garlic. It might sound like a lot but it's the base of the taste. You can definitely reduce this amount according to your preference.

·   Mince one-half of the green chili pepper. We are using one half because it is quite spicy but you can increase it if you have a milder pepper.

·   Cut two tomatoes into slices, remove the skin, and chop it. A useful tip, if you'd like to reduce the acidity, remove the seeds of the tomatoes as well.

·   As for the preparations of green beans, wash, dry, and remove the ends of green beans and cut them into small pieces. If the beans are large, you can slice them into halves as an additional step.

·   The final preparation step is to wash the rice thoroughly, soak it in water, and set it aside for one hour. This step reduces the starches and gives you more tasty and fluffy rice.

 

Cooking:

·   In a big pan sauté garlic with olive oil over medium heat. Be careful though not to overcook the garlic as it could give a better taste.

·   To the garlic, add the green chili pepper, sauté for one minute, and follow with adding the tomatoes.

·   Afterward, add salt, black paper, cumin, red paper powder, and tomato paste.

·   Following, add three cups of hot water and bring everything to a boil, then reduce the heat and let it simmer. This way you can make a smooth flavorful tomato paste that complements your dish.

·   Once the tomatoes have softened, add the green beans, and pour 3 more cups of hot water to cover everything up, once boiled, reduce the heat, cover the pot, and let it cook slowly over low heat for 45 minutes. Don't rush this step, as a slow cooking process is a way to perfect the texture of beans.

·   In the meantime, in another pot, add rice (previously washed, soaked, and drained), a few bay leaves, salt, and two cups of hot boiling water. For cooking the rice, we haven't used any fat, but you can use butter, ghee, or oil of your preference.

·   Bring the rice to a boil, reduce the heat, cover the lid, and let it steam for 30 minutes. Once cooked, the rice will have a fluffy texture and full aroma.

 

Serving:

·   For plating, use a small bowl to shape the rice and flip it on a plate, top it with cooked green beans, and your meal is ready for serving.
